From the recipe box of the Soul-Full Sisters

There was much deliberation over this chili! We had to ask ourselves, “What do we like most about chili?” – the consensus, meat. Our meat to bean ratio is 3-1. Our three meats are as follows: lean ground beef (93/7), bratwurst for fat content, and stew beef for great meaty texture.

When developing this recipe, smoke and a little heat are also important to us. Now, when we mention heat, we don’t like it to hurt. Subtle heat is good heat in our book. We want to be able to taste all of the other chili components without our taste buds burning to the point of no return. We like just enough heat so that chili can be topped with dashes of Texas Pete in the end. No matter how perfectly balanced a chili is, we still want that hot sauce finish! So, our chili was calculated with that mind.

We achieve “our” perfect level of heat with this pepper combo: 3 poblano peppers + 2 jalapeno peppers with seeds and veins removed. Jalapeno is likely the most familiar of the two. These babies are HOT but there are hotter peppers out there. On the pepper heat scale, they are considered one of the mildest. Poblanos are as mild as a bell pepper, but carry a really nice earthy sweetness.
